Delicate and fine, without lacking in incisiveness. Frank and hot-blooded with a tense and clean finish; a memory of liquorice roots and green balsamic invite you to return to the glass.
First courses of medium structure, even spicier dishes but not dishes that are hot or over elaborate. Second courses of good structure and aromatic tenacity, even game. Mature soft or semi-hard cheeses, fresh and matured cured meats.
