Soil
The vineyards are located atop the hills that surround San Venanzio in Fossombrone. The soil has a medium texture with a calcareous tendency. The plantings are at an altitude between 300 and 500 meters above sea level with a south, southwest exposure. The training system is a simple Guyot with a density of 5500 vines per hectare.

Harvest
The 2025 vintage was characterized by a warmer winter than the previous ones with scarce rainfall. The summer was sultry and arid.

Vinification
During the first ten days of August, the grapes are washed directly on the vine using water and citric acid to remove dust, insects, and any residues from organic treatments. The harvest is carried out manually during the night and very early morning to ensure the maximum integrity of the fruit. The grapes, collected in crates, are brought to the winery and further selected on a sorting table by experienced eyes and hands before being destemmed, cooled, and sent to the press. After pressing in the absence of oxygen, only the best must from the first fraction is transferred for alcoholic fermentation in various fermentation vessels: stainless steel and 20 hl barrels. The wine remains on its lees for a minimum of 6 months. At the end of this period it is carefully bottled in the total absence of oxygen to favor the persistence of the aromatic notes characteristic of the vineyard.
