VINEYARDS OF ORIGIN

The vineyards are located on the hilltops surrounding San Venanzio in Fossombrone. The soils are medium-textured with a calcareous tendency. The vines grow at an altitude of between 300 and 500 metres above sea level, with a south-southwest exposure. They are trained to simple Guyot at a density of 5,500 vines per hectare.

HARVEST

The vintages that make up ADAGIO ATTO II form a harmonious composition, each with its own unique and powerful voice. The 2024 and 2021 vintages are like lush, immediately accessible melodies, while 2020 and 2015 provide a solid structure, like a deep bass that brings strength and warmth to the entire composition.

VINIFICATION

During the first ten days of August, the grapes are washed directly on the vines using water and citric acid to remove dust, insects and any residues from organic treatments. Harvesting is carried out by hand at night and in the very early morning to preserve the fruit’s integrity. The grapes, picked into crates, are brought to the winery and further selected on a sorting table by experienced eyes and hands before being destemmed, chilled and sent to the press. After pressing in the absence of oxygen, only the best first fraction of must is transferred for alcoholic fermentation in a range of vessels: stainless steel, 20 hl casks, tonneaux, barriques and amphorae.

The wine remains on its lees for at least 6-8 months; some fractions undergo malolactic fermentation followed by bâtonnage, allowing the wine to achieve maximum aromatic and flavour harmony. The cellar’s “library” of vintages and different approaches to vinification and maturation has made it possible to create an extraordinarily fine and complete first composition, fresh and enjoyable like the great white wines. ADAGIO ATTO II is blended from the following vintages: 2024 and 2021, both vinified and matured exclusively in stainless steel for 8 months before bottling; 2020 and 2015, vinified in large 20 hl untoasted wooden casks for 8 months and subsequently matured in stainless steel before bottling. Finally, the different fractions are blended in stainless steel and remain there for a further period of maturation before bottling.
