Winemaking
The two grapes are harvested and vinified separately in fermentation vats. They complete the process in 20 hl bottles; the cuvée is formed with variable percentages depending on the vintage. 36 months for secondary fermentation, manual riddling, minimum 6 months in the bottle after disgorgement.
Aging
The wine ferments in 20 hl barrels of French oak, 24 months for secondary fermentation, 6-8 months of aging before release to market.
Tasting Notes
M'ARTE presents itself in a Salmon-colored robe. The chains of bubbles that escape in the glass are fine and persistent, lending brightness. Initially, on the nose, there are notes of pastry, followed by forest fruits, a floral hint reminiscent of roses, and a light sweet spiciness. The mouthfeel is characterized by a soft entry supported by an acidity that rebalances the sip and drives a persistent flavor with hints of small red fruits, floral notes, and a savory finish. Pairings: dishes with good richness. Serving Temperature: 6°/8°C.
